Zat organik yang pada hidrolisa menghasilkan unit- unit pembentukan yakni asam- asam amino.<br />

Adalah group molekul yang sangat kompleks dan bervariasi di dalam tubuh manusia.<br />

a. Struktur kimia :<br />
- Simple protein<br />
Asam amino dan / derivat- derivatnya ( Al, glob, glut,frutamin)<br />
- Compound/ conjugated protein<br />

<p><strong>IV. MEKANISME PROTEIN</strong><br />
A. Pencernaan dan absorbsi dari protein</p>
<p>pencernaan protein dimulai dari lambung oleh HCL dan pepsin(menjadi proteosa dan pepton)-------&#62;<br />
enzim pencernaan protein (tripsin, kemotripsin) dikeluarkan dari pancreas ke usus halus---------&#62;<br />
diusus halus, protein di cerna<br />
asam amino didalam mukosa usus sel usus halus di absorbsi------------&#62;<br />
absorbsi asam amino masuk ke vena porta dan masuk ke hati------------&#62;<br />
hati mengatur distribusi asam –asam amino keseluruh tubuh<br />
protein yang berlebih tidak diperlukan / sintesis oleh tubuh akan dieksresikan memalui urine dan feces dalam bentuk urea<br />

<p><strong>V. METABOLISME PROTEIN</strong></p>
<p>Adalah sintesis dan pemecahan protein berjalan secara bersamaan</p>
<p>Keseimbangan<br />
Protein turn over dibongkar dibangun kembali<br />
Tertinggi = mukosa usus, hati , pancreas, ginjal, plasma.<br />
Rendah    = otak, otot, kulit<br />
Colagen --&#62;hampir tidak ada<br />
- Pertumbuhan = sintesis &#62; pembongkaran<br />
- Anabolisme (building)    sintesis protein jaringan= adanya asam amino yang     spesifik</p>
<p><strong>Zat yang mengatur sintesis protein:</strong><br />
1. DNA.<br />
2. mRNA.<br />
3. Ribosom.</p>
<p><strong>Tahap - tahap pembentukan protein:</strong><br />
1. Aktivitas dari asam amino.<br />
2. tRNA.<br />
3. Pembentukan rantai peptida.</p>
<p><strong>A. Kebutuhan akan protein</strong><br />
(protein requirement) adalah<br />
1. RDA       = 0,8 gr protein per kilogram berat badan untuk orang dewasa.<br />
2. Laki- laki dewasa, BB = 70 kg, maka membutuhkan 56 gr protein/ hari.<br />
3. Wanita dewasa, BB      = 55 kg, maka membutuhkan 44gr protein /hari.</p>
<p><strong>B. Kebutuhan khusus (Special requirement).</strong><br />
Pertumbuhan :<br />
1. 6 bulan pertama = 2,2 gr/kgBB.<br />
2. 6 bulan kedua      = 1,6 gr/kgBB.<br />
3. Kehamilan            = ditambah 30 gr/ hari (44 + 30= 74gr/hari).<br />
4. Menyusui               = ditambahi 20gr/hari (44 + 20= 64gr/hari).<br />
5. Strees fisik            = Infeksi berat ditambahkan 1/3 dari kebutuhan.<br />
- Terbakar             = 2 -4 x Normal.<br />
- Exercise               = 1-1,5 gr protein/kgBB.</p>
<p><strong>VI. SUMBER PROTEIN.</strong><br />
Bahan Makanan Sumber Protein.<br />
<strong>Protein nabati :</strong><br />
1. Kacang-kacangan.<br />
2. Cerealla.<br />

<p><strong>PATOFISIOLOGI</strong><br />
Masalah yang timbul dengan terlalu sedikit atau terlalu banyak protein dalam diet.<br />
<strong>Defisiensi Protein :</strong><br />
1. Bila hanya defisiensi protein saja --&#62;sangat jarang.<br />
2. Protein energi malnutrisi(PEM) = Penyakit kurang kalori prot (PKKP).</p>
<p>Kwashiorkor  intake protein yang buruk<br />
Marasmus  kelaparan kronis( defisiensi KH)<br />
Berlebihan Protein:<br />
- Diet yang tinggi meningkatkan kebutuhan akan cairan (karena sintesisnya    diperlukan 7 kali kebutuhan air dari biasanya) dehidrasi (gagal ginjal)    jarang (belum terbukti secara empiris)<br />
- Meningkatkan resiko sakit jantung</p>
<p><strong>Kebutuhan yang dipengaruhi:</strong><br />
-   Umur.<br />
-   Berat badan.<br />
-   Nilai hayati (Protein) makanan sehari- hari.<br />
-   Hamil / menyusui.<br />
-   Sakit.<br />
- Penyakit yang berhubungan dengan protein: KKP (Kekurangan Kalori             Protein).</p>
