A super-quick stirfry that uses up the stems of cilantro - waste not, want not. I strongly recommend that you look for pastured beef, which is available through many CSAs and at some farmers' markets - check out what's available near you at this fantastic site: LocalHarvest.org. Not only will the flavor astound you, you'll be doing something good for the environment and your health!

ingredients

8 oz beef - the meat is cut very thin and marinated, so you needn't spend top dollar to get the most tender cut

1 bunch cilantro, leaves removed, some saved for garnish, others used for another dish (such as Cilantro Salad!)

1 T fresh ginger, peeled and cut into fine matchsticks or grated

1 T oil

marinade

1 tsp light soy sauce

1 tsp tapioca powder or cornstarch

1/2 tsp sugar (I recommend brown or raw cane sugar)

method

Rinse and pat the beef dry, cut into 1/8" thick slices, then cut the slices into 1/8" wide shreds.

Combine with the marinade ingredients and allow to sit for 20 m.

In the meantime, wash the cilantro stems and the leaves you've reserved for garnish.

Cut the stems into 1" sections.

Heat the oil in the wok, then stirfry the ginger shreds just until they become fragrant.

Add and stirfry the beef shreds until no longer pink.

Add the cilantro stems and stirfry just until tender, approximately 1 m more.

Serve garnished with the reserved cilantro leaves.

"Got Urself A ..."

The rest is history.

Tonight my husband decided to get in touch with his more primitive inner man by grilling enormous pieces of meat over open fire. As someone who rarely cooks things like steak or other large chunks of animal product, I was amazed at the prices of beef.

$5.99 discounted for a pound of rib eye? Apparently $11.99 normally?? I'll take pasta and vegetables for a fraction of the price over that any day. Nevertheless I indulged my husband and purchased two slabs of meat that would've made Fred Flintstone proud. And they were good! (And admittedly, I did just eat a $7 heirloom tomato from the local farmer's market, so I guess a $9 steak for my husband is entirely fair)

The prices of meat in the supermarket bring me back to a question that has been floating around in my head for several months, ever since I first ate at Bates' Steakhouse. Is it reasonable for a place like Bates Steakhouse in Eugene to charge $30 for this same pound of rib eye (taking into consideration that they also get wholesale discounts)? Going by retail prices, I would say $10-20 for 6-8 ounces of Filet Mignon with a side is quite reasonable. But $30 for some not particularly great meat? Even more surprising are their prices for some plain old Fettucine Alfredo (A sauce that in my many years of regular Italy trips I have never encountered in that country). $18?? Cost of ingredients: Probably $2. And how about $3 for blue cheese crumbles? And $5 for a bread basket that I would expect to be complimentary? Even in Italy the infamous 'pane e coperto' is usually only E. 1.50 or so.

God knows what they spend the rest of the money on, because it isn't the decor of the restaurant. The atmosphere is less than inviting; resembling someone's old Eugene house, only without that charming homey feeling, and with the cold sneer of a pretentiously priced cowboy-theme menu. Friends seem to share my amazement at their prices.

And here's what really breaks my wooden shoe, as we say in Dutch: I just received a very amateurish newsletter that looked like your latest community letter (only crappier), advertising Bates' great new steak deals. And what do I find on the inside of the newsletter? A list of their customers who are celebrating their birthdays or anniversaries. Saps like me, who filled out the comment card and now get their information sent out around the city. Is it just me, or is this a grossly inappropriate invasion of privacy? Publishing my name and birthday/anniversary without my permission, for advertising purposes ("Look at all these people who are loving customers") ???

As my accountant once told me: "New restaurants are the worst business to get into. They are opened a dime a dozen, but 95% of these clients comes back to close down their business within 3 years." So it will probably be with Bates. But perhaps I just don't appreciated grilled meat enough.

or how exactly do I cook that thing? Earlier, I posted a simple, no-fail recipe for marinating a flank steak. And again, there are a million recipes on the web and inside your favorite cookbooks. Then, while going through my own recipe archive I realized that I hadn't really discussed this cut of meat and why it would be such a great addtion to your usually rotation of recipes.

This is a flank steak (raw, of course).

A flank steak is a long, think cut of beef full of tough connective tissue and is found near the hindquarters of the animal. If you are a beef lover who is looking for the meat "to melt in your mouth," than this is not the cut for you. But, what it offers (if cooked properly) is exceptional beefy flavor.

By the way, a flank steak is not the same as a skirt steak. The skirt steak has risen in popularity in the recent years and is taken from the diaghram muscle of the animal. The grain of the skirt steak runs across it, rather than the length of the cut like the flank steak (note the photo).

If you are planning to grill your flank steak, you may want to consider cutting into the steak to creat a cross-hatch pattern. It will look like diamonds. Never cut all the way through. This technique will help prevent the steak from curling, particularly on the thinner ends of the steak.

And, most importantly when broiling or grilling your steak, watch the timer carefully. Nothing ruins a flank steak like overcooking. It will become tough and unappetizing. Shoot for rare to medium-rare and you'll have a great meal. Finally, let the meat rest for about 5 minutes after you remove it from the heat source. This will keep the juices (those tasty, beefy juices) from running all over your cutting board. You want the juice to stay put for great flavor.

[caption id="attachment_231" align="alignleft" width="128" caption="Protesters and police clash in Seoul"]

[/caption]

After eighteen days of relative quiet, at least as far as candle light vigils go, protesters reappeared in Seoul's Jongro area on Thursday to protest Korea's importation of US beef. Police in riot gear clashed with what the Hankyoreh says was a crowd of over ten thousand as Korea commemorated the 60th anniversary of its constitution.

Protesters claim the government is ignoring the voice of the people, although the rate at which US beef is being bought and sold here says otherwise. Linking the protests with the dispute over the Dokdo islets and the suspended sentence for Samsung chair Lee Kun-hee one banner reads, "Samsung not guilty, protesters guilty. Dokdos sold, mad-cow bought!"

A report in the Korean language Dong A Daily noted that one cameraman for the paper was attacked and threatened by protesters, who took away his camera to see what had been filmed. The incident reflects the growing resentment against what some here see as the domination of a biased conservative media.

It seems PD Diary's apology for distorting the facts over the safety of US beef has had little impact on those opposed to it's importation.

Korean bloggers reacted to the latest round of candle waving with criticism. One writes, "As the country slides downward, with the killing in NK and the loss of Dokdo, why are these people so obsessed with mad-cow?" It continues, "Who are these people? Can't the government do anything?"

Another comment harkens back to the good old days of military rule. "Back then life was good for folks with not much money."

There's a perfect storm of national and international disputes that is tearing at the fabric of a country facing serious economic decline, and the country's bulldozing leader seems asleep at the wheel.

This recipe comes from a cookbook called 200 Years Of Australian Cooking by Babette Hayes (published

This recipe comes from a cookbook called 200 Years Of Australian Cooking by Babette Hayes (published by Thomas Nelson [Australia] 1970). My mother bought it for her mother in 1972 or thereabouts and Nana gave it to me. It's got some fascinating recipes, including whole sections on baking over a campfire. This recipe comes from that section, although I've modified it for modern stove-top cooking. Also, I can never get the mashed potato topping to work. Mine ALWAYS sinks into the casserole. Thus far, I've been preparing the casserole on the stovetop in an ovenproof casserole, then putting it in the oven to cook/attempt to toast the top after adding the potato topping. If you can figure out how balancing the potato is accomplished, please let me know!!

So without further ado!

MOLLY'S STEAK CASSEROLE

Ingredients:

Fat
2 carrots, finely chopped
3 onions, finely diced
4 tomatoes, finely chopped (or one tin diced tomatoes)
2 sticks celery, finely chopped
1 - 1.5 lbs (about 500 - 700g) steak, cut into small cubes
3 Tbsp flour
1 pint beef stock or water
1.5 Tbsp worcestershire sauce
salt & pepper
2 apples, cored, quartered, then sliced into thin wedges (peeling optional)
1.5 lb (700g) potatoes, boiled and mashed with butter, salt & pepper

Method:

Melt fat. Add all the chopped veges and mix well. Add meat. Sprinkle with flour and stir through the veges. Pour in enough of the stock/water to cover. Add worcestershire sauce and seasonings.
Bring to boil for 1.5 hours. Add the apples, if desired, for the last 30 minutes. If cooking over coals, top with potato, cover casserole and return to the coals. If cooking in an oven, top with potato and serve when potato crust is golden.

Additional Chef's Notes:

I would add some alcohol for flavour (red wine, bourbon, a dark beer? Maybe sherry, although I'm not a fan myself. Pick your poison) to the stock. I wouldn't reduce the volume of stock as the alcohol tends to reduce the liquid anyway.

If the gravy is looking a little thin towards the end, add a little cornflour slurry to thicken it.

I don't think I've had a Sloppy Joe since I was a kid. It's one of those dishes you reserve as a distant childhood memory...until you're really craving it and yank it back to life! The problem with it is that you go to a grocery store and are confronted with cans of "instant Sloppy Joe mix." But because it uses cheap ingredients, and it's not hard to make, why not try home-cooking it yourself? -Guy

Ah Baguette, I started going there the same time I started going to UCR. Ty Te, the owner of this establishment is an incredibly nice guy first off, and knows how to make delicious sandwiches. I've had most of the sandwiches on their menu and all have been delicious. Their smoothies are delicious as well and that smoothie list includes my first avocado smoothie. I was rather skeptical at first about this avocado smoothie so I made Christine get it so I could try it. Of course it was delicious and I was a fool to question it. I've taken a lot of friends here in the last 2 years, even my mom and everyone has loved it. Their sandwiches are great takeout as well, and I've taken far more of them to home school or the office than I've ever eaten there. They weren't putting tomatoes on their sandwiches during my visit since I guess there's some sort of salmonella risk, and that kind of bummed me out, but the sandwiches were still delicious.

I actually got 2 different half sandwiches: a steak portabella and Cajun shrimp. I added avocado to both for a nominal fee, but I regret my choice of bread. The sandwiches were both delicious, but not getting a baguette from Baguette is bad form. I guess I'm just guilty of liking Ciabatta too much.

the shrimp kind of fell back when I lifted the sandwich up for the picture, but I can assure you that there was plenty, and it went quite well with the avocado

here is a glimpse of the steak portabella, the cheese they use(95% sure its provolone) is mild enough to perfectly bring together their mild spread with the beef and mushrooms. It helped me to realize that in my sandwiches not EVERY ingredient needs to be packed with flavor.

The first week of July is inspired by junk foods, BBQs and fireworks. The streets are littered with hotdog wrappings, poutine and soda cups, bloody napkins and what have you. Here in Northern America, BBQ usually means grilled burger patties and sausages, whilst back in the Orient, it generally refers to skewered chunks of meat on a fine bamboo stick... accompanied with stir-fried noodles or rice of course.

I personally prefer grilling over firewood, rather than gas or electric cookers. The flavor of smoke gives it that extra special something that is lacking in stove-top cooked meals. It also gives you that primitive edge :) Though grilling is not considered to be the healthiest choice, I think cooking over firewood is still better than modern substitutes such as gas and lava rocks, which can emit hazardous chemicals to your food. And of course, if you are opting for processed meat, you are likely to double, or make that triple your chances of ingesting carcinogens. Way to go!

Here I am jabbering about grilled meats when in fact the recipe for today is, well, fried. Sometimes grilling is not the quickest way to get to the bottom of your hungry stomach, so you have to explore other options. Anyhow, I am still adamant about grilling homemade, fresh burger patties due to the fear factor of seeing it slowly slither through the metal wires and drop into oblivion. I think in this case, I have to eliminate the fresh greens so it will stay put.

Sauteed Onions and Mushrooms

1 cup mushrooms, sliced thinly
1 big onion, sliced thinly
ghee / clarified butter
smidgen of salt (a hint)
optional: red pepper flakes

Sauté onions in ghee until semi transparent and soft.

Add mushrooms, season and continue stirring until cooked.

Set aside.

Beef Burger Patty

1/2 kg ground beef
1 onion, minced or processed in processor
1 tbsp. garlic powder or freshly minced garlic
3 tbsp. Cilantro (aka Coriander leaves), processed in processor
1 tbsp. oyster sauce or Worcestershire sauce
1 tbsp. fish sauce
salt and pepper to taste

Mix all the ingredients in a bowl.

Shape and flatten the meat into hamburger patties.

Fry patties on both sides until cooked.

Drain the extra oil by placing it on a tissue-layered plate.

Slightly warm burger buns in the toaster. Spread some mayonnaise if preferred.

Place burger patty and generously top it with the sauteed Onions and Mushrooms.

...and you know where this is going, blah, blah, blah...

Shut up and indulge.

Sebastian H Mernild of the University of Alaska, Fairbanks, studied a similar phenomenon that took place in the Kangerlussuaq area last August. No one was killed, but the event resulted in a large lake being completely drained in 12 hours, spreading large chunks of ice on roads.

Mernild said jokulhlaup occur without warning and typically take place in parts of glaciers were melt water has gathered on top of glaciers, or where glacial lakes have formed. If the floods occur near populated areas, they can shatter bridges, roads and buildings. They can also have a dramatic effect on the terrain and wildlife in unpopulated areas.

...

Economists say that Zimbabwe's economy is heading for a crash, as inflation soars to new heights. Gono said Wednesday inflation was now at 2,2-million percent, although analysts estimate it at ten times that - and the Zimbabwe dollar is plunging to new lows.

A single US dollar bill was trading Wednesday at 70-billion Zimbabwe dollars, down (from the Zimbabwe perspective), from 45-billion late last week.

Mugabe, 84, blames "illegal Western sanctions" for the country's hardships, although critics point out that he, his family and cronies are the only ones targeted by sanctions banning them from travelling to most Western countries and from holding assets there.

Despite the state offer of cheap food, hundreds of NGOs remain banned by the regime from distributing food to the millions of Zimbabweans thought to require relief aid.

In Africa, the gene variant may account for 11 percent of HIV infections, the researchers said.

Sexual behavior and other social factors cannot completely explain why more than two-thirds of the world's 33-million people infected with HIV live in sub-Saharan Africa, the researchers said. So genes may be playing a pivotal role.

The gene in question controls a protein on the surface of red blood cells.

But even as it elevates a person's susceptibility to HIV infection, having this version of the gene seems to slow the progression of Aids. Those with the variant who have been infected with HIV live roughly two years longer than people who do not have it, the researchers said.

An E. coli outbreak traced to recalled beef in Michigan and Ohio has spawned cases in three other states, U.S. health officials said Tuesday.

New York, Kentucky and Indiana each have one lab-confirmed case of a bacterial infection that matches the 41 previously reported cases, according to the Centers for Disease Control and Prevention.

The outbreak has been traced to beef sold in Kroger supermarkets in Michigan and Ohio. The Kroger Co. last month recalled ground beef sold in Michigan and Ohio stores, then this month expanded it to include other states. Nebraska Beef Ltd. supplied the meat, ultimately recalling 5.3 million pounds of beef.

The Kentucky patient lives near Ohio, but the New York and Indiana patients did not travel to either of the states where the outbreak began, said Mark Sotir, a CDC investigator working on the outbreak.

All 44 illnesses in the outbreak are attributed to the same type of E. coli, one that causes a potentially deadly bacterial infection. The illnesses began between May 30 and June 24. CDC officials say 21 of the victims have been hospitalized and one developed kidney failure, but no one has died.

Today's JoongAng Daily reports the influential MBC program PD Diary issued a "reluctant apology" for inaccuracies in it's show on US beef and mad cow disease, errors that led to widespread protests here in June and July.

Questions remain however over whether the program's producers intentionally distorted the contents of their report in order to fan political flames. Prosecutors in Seoul have requested the original reports, in order to compare them with what was aired. PD Diary has thus far refused the request, claiming press freedom.

In it's defense PD Diary has gone after the big three conservative papers in Korea, the Chosun Ilbo, JoongAng Daily, and the Dong A Daily, commonly referred to as ChoJoongDong. It says the papers ran a smear campaign against the program, criticizing the show while failing to represent its side of the story.

If I'm not mistaken...that song was on Trilla. I admit the song was some hot shit. I was surprised to hear Trick on it. Don't get me wrong, I be bumping Trick since the you ain't no nann days. I had Thugs-R-Us on constant rotation.

Nevertheless, Ross did Trick a favor putting him on a track with an all-star cast of him, Wayne, and Jeezy. The last thing Trick should be doing is biting Ross' hand. Not only that, but Trick was recently spotted in a video dissing Plies, but giving shouts to Ross. You know they are both on "Out here Grindin'", so WTF. I thought they were on some good terms. I don't understand what started all this.

I have been to the top of the mountain... and they serve hamburgers.

OK, that mild rise on Girard isn't really even a hill, but the hamburgers really are amazing. I'm talking about the newly opened Sketch Burger and Shake Joint, at 413 E. Girard in Fishtown [where: 19125]. Dear readers, we have a serious contender for Best Burger in Philly.

The menu is simple: burgers and shakes, and one token salad. Pick your protein, sauce and toppings, and choose from four shake flavors (vegan or milk). Options are beef, turkey, 'smashed onion,' vegan burger, chicken, and American Kobe beef, as well as the day's special, a seitan burger highly recommended by the server. Joe and I, being hedonists, went straight for the American Kobe burger ($9.75). He got harissa aioli, I chose Thai peanut sauce on the side. I went for grilled onions and avocado. The burger arrived, and it was massive. Really, I cannot believe they crammed that much meat into one burger. Most kobe burgers tend to be on the small side-- $9.75 may be expensive for a burger, but for kobe it's really an excellent deal. It arrived medium rare, thank God-- overcooking meat of that quality is a sin. We got our burgers to go, so the bun was slightly soggy, but it really held up well given the juiciness of the burger. The grilled onions sat below the patty, and above it were slippery sliced avocado, a slice of juicy ripe tomato and some high-quality salad greens. This is a difficult burger to eat. It's crammed full of fresh ingredients that want to come bursting right out of the bun. The effort, however, is worth it, as is the 20-minute wait while your burger is cooked to order. The end result is incredibly rich, flavorful, juicy, and did I mention rich? It was a bit of a shock to my system since I've been eating lightly recently, but very much worth it.

We also shared a vanilla milkshake, which was flavorful and thick but not too thick. (As Joe put it: "Thick, but I won't have a brain embolism trying to suck it through a straw.") Everything is made fresh here, so no chalky chemical taste either. I try to take it easy on the lactose, so I'm really looking forward to trying a vegan shake.

The shop itself is cute; there are blackboards everywhere and rolls of butcher paper on the tables, and customers are encouraged to doodle with chalk (hence the "Sketch" name). It's also open until 11 pm, which is wonderful for those of us who live in the neighborhood. And vegans, vegetarians and the lactose-intolerant can all find joy in this menu.

I found only two downsides to our delicious, gut-busting meal. One was the cheese selection: American (ew, plastic), horseradish cheddar, pepper jack, vegan and bleu. One straightforward cheese option, an aged cheddar or maybe a sharp provolone, would be welcome. The other was the standard side order of Cheesy Poofs-- ours were stale. Sketch would be better off dropping the little orange orbs and developing the ultimate French fry. They've mastered the ultimate hamburger, so why not?

Hi again! :)

Another dish from my kitchen for lunch today ;)

I made spagetti for my lunch - ehem..from the scratch yeah ;) Li hai yeah? hehehe...

To make the sauce:

minced beef, tomato, pepper, onion, mushroom, a little bit of oil (i wonder is there any way I don't need to use oil to fry the onion and beef?- do u know? Mind to share?), tomato and chili sauce. Also, some white pepper, salt (if u want), and put some cinnamon powder and rosemary herbs. love these 2 inside my dishes. hehehe...

Before you make the sauce, boil the spagetti first. i always put some olive oil..not to much..just half of tea spoon to make the spageti not sticky. Boil until spagetti soft- make sure not overcooked! hhehe...Then rinse the spagetti in the rinser. hehehe

Then, you can serve your spagetti- obviously, put the spagetti and put the sauce on top of it. If you have Parmesan Cheesse, sprinkle it on top of your sauce. mm..I forgot that I finished mine. Should buy later- if I remember. hahahah...

All right guys...enjoy my simple spagetti.

NB: I have the spagetti sauce - tomato sauce with mushroom in bottle. I couldnt open the lit this afternoon. No choice, have to do from the scratch...oh i need a man - strong man to open the lit!!! hahahaha...I wish that there was a man in my flat. at least, i could asked him to help me. hehehehe....

Another dish from Chef Emma :D xoxoxxo...Enjoy!

* Bear in mind, I am not a qualified chef. I think it's not good to say "chef". Chef is a special title for professional cook. I apologize! It just likes, you claim yourself a 'doctor', but you are not a doctor yet! ;)

I have been wanting to make kabobs on the grill for a while now, but just haven’t really found

I have been wanting to make kabobs on the grill for a while now, but just haven't really found a recipe that looked good. I decided this week I would try this recipe from allrecipes.com for the teriyaki marinade and the put the meat on skewers with chunks of onion and fresh pineapple. These kabobs were very good, the marinade provides a rich teriyaki flavor and the grilled onions and pineapple were the perfect combination. If you like peppers, I am sure some red and green bell peppers would be good on these kabobs as well, but I don't like peppers. :) We had these kabobs with tropical rice.

Teriraki Kabobs

Marinade:

1/3 cup soy sauce

2 tablespoons vegetable oil

1 tablespoon brown sugar

1 garlic clove, minced

1 teaspoon ground ginger

1 teaspoon seasoned salt

1 1/2 pounds boneless beef sirloin steak, cut 1 1/4 inch cubes ( I am sure boneless, skinless chicken breast would also work well.

Kabobs:

1 small pineapple, cut into 1 1/2 inch cubes

1 large onion, cut into wedges

Other veggies that might be good: Mushrooms, tomatoes, red and or green bell pepper

In a bowl, combine soy sauce, oil, brown sugar, garlic, ginger and salt; mix well. Pour half of the marinade into a large resealable plastic bag or shallow glass container; add beef and turn to coat. Seal or cover; refrigerate for 4-8 ours, turning occasionally. Cover and refrigerate remaining marinade.

Drain the meat, discarding the marinade. On metal or soaked bamboo skewers, alternate meat, onions and pineapple. Grill, uncovered, over medium heat for 3 minutes on each side.

Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness.
